Things are a bit crazy around here! Between school, work, the SoCal Social, and a craft show I'm doing next month (more on that to come!) I feel like I'm a bit underwater.
When things are super busy, the last thing I feel like doing is making huge, involved dinners. Fast and easy is the priority these days.
Fortunately I just tried a new recipe that is fast and easy – and super yummy! It is these Baja Fish Tacos!
Even through we love eating fish tacos out, I hadn't ever made them at home. I'm a little nervous about cooking fish for some reason.
These were crazy easy though! The recipe has a short ingredients list too – so you're not breaking the bank on dinner. The breading on the tacos is a combination of cornmeal, McCormick Chili Powder and Garlic Powder, which give them a nice Mexican flavor.
I tweaked a Coleslaw recipe to go with the flavors in the fish – I used a regular simple coleslaw and added Chipotle peppers. So it added some spice that went great with the avocados!
