So it’s been forever since I posted a recipe! Part of that has been the holidays – it was a crazy crafting whirlwind. :)
The other part was a couple of commenter’s letting me know they weren’t as fond of those posts. And I let that get to me just a bit.
But one of the goals I set for myself and Flamingo Toes this year was to be more “real” with you guys. And the real thing is – I love to cook. And I love sharing recipes.
So I hope you’ll bear with me and if you don’t enjoy the recipes – that’s ok. :) I love you anyway.

It’s a Greek Seven Layer Dip! So yummy.
Ingredients:
1 lb ground turkey
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon salt
1 pkg hummus (I think it was 8 oz)
1/2 English or seedless cucumber
2 Roma Tomatoes
1/2 cup Kalamata olives
1/2 red onion
4 oz pkg feta cheese
1 container of Greek dipping sauce/Tzatziki sauce
1 Tablespoon chopped fresh oregano
Directions:
Begin by browning your ground turkey. Season with garlic powder, oregano and salt.
While turkey is browning, chop your onions.
Tip: If raw onions bother your stomach or have too strong of a flavor for you, chop them first and place them in a small bowl. Pour in enough vinegar to cover the onions. Let them soak while you prepar the rest of the recipe. This will take some of the bite out of the onions, make them a little sweeter and easier to digest. You won’t really be able to taste the vinegar.
After you chop your onions, chop up your cucumbers, tomatoes, and olives.
Now comes the fun part!! The layering!
Begin with the hummus. Spread it in the bottom of a medium sized dish.
When your ground turkey is cooked, spoon that in the dish over the hummus.
Layer in all your veggies – cucumbers, tomatoes and olives. Drain your onions and add them too.
Crumble the feta cheese over the veggies and then top with the Greek yogurt sauce. Sprinkle the chopped fresh oregano on top.
Isn’t it pretty! It tastes as good as it looks. :)
Serve this with yummy pita chips.
We had this for dinner – it was so quick and easy. But you could make this as an appetizer, a veggie dish without the turkey, or take it to a potluck!
And I’m not terribly fond of leftovers (insert another of Mr. F.T.’s eye rolls here) but let me say this makes super tasty leftovers too!
I just love Greek food – this one is definitely going into our rotation – it’s so fast and easy.

Ok. So I just counted up and this is an 8 layer dip. Huh. Don’t hold that against it. All 8 layers are yummy.
